Spinach and Mushroom Lentil Burgers

This lovely vegetarian meal comes straight from my baby sister. She is truly inspiring and always making the most delicious meals for your body and mind.

These burgers are super simple and can be whipped up in an afternoon and used for days because it stores well.

It is such a great option if you are the 21 day fix, a clean eater in general or new to vegetarianism

Spinach and Mushroom Lentil Burgers


  • 1 cup finely chopped Baby Bella mushrooms
  • 1 1/2 cup cooked brown rice
  • a few bunch finely chopped spinach
  • 3/4 cups lightly cooked green lentils
  • 3/4 cups parmesan
  • 3/4 cups oats
  • garlic power to taste
  • sale to taste
  • pepper to taste
  • 1 egg
  • 5 tablespoons whole wheat flour


Step 1
Combine mushrooms, rice, spinach, parmesan, oats, and lightly cooked green lentils in a mixing bowl.
Step 2
Combine together with a potato masher, adding spices to taste.
Step 3
Once seasoned, add egg and flour.
Step 4
Continue to mash until you get a stick consistency, DO NOT MASH TOO MUCH or you will lose texture
Step 5
Form into burgers with wet hands
Step 6
Cook on med temperature with cooking oil of your choise
Step 7
Store the rest in the freezer for a quick lunch
